Yields: 6 servings

Calories: 307

Carbohydrates: 41g

Ingredients:

•2 C almond or coconut milk

•1 C quinoa

•¼ C chia seeds

•¼ C slivered almonds

•2 tsp vanilla extract

•3 C mixed berries

•3 C Oikos Triple Zero Greek yogurt

Instructions:

1. Bring milk, quinoa and vanilla to a boil in a medium sauce pan. Reduce heat and simmer for 15 min or until liquid has dissolved.

2. Remove from heat. Add in 2 C berries and almonds. Let sit for 5 minutes.

3. Divide into 6 servings. Add ½ C yogurt and remaining berries.

4. To add fat, include more chia seeds or almonds. To increase protein, remove some quinoa and increase the Greek yogurt.
