Sundried Tomato Basil Chicken Meatballs

Nutrition:

Serving Size: 6 small meatballs or 3 large

Calories: 215

Carbs: 3g

Protein: 28g

Fat: 10g

Ingredients:

• 1 pound ground chicken

• 1 egg, beaten

• 3 cloves garlic, minced

• 1/2 cup sun-dried tomatoes, chopped

• 1/4 cup fresh basil leaves, chopped

• 1/4 cup seasoned breadcrumbs

• 1 teaspoon onion powder

• 1/4 teaspoon salt

• 1/8 teaspoon black pepper

• 1 tablespoon olive oil

Instructions:

1. In a large bowl, mix together the ground chicken, egg, garlic, sun-dried tomatoes, basil, seasoned breadcrumbs, onion powder, salt, and black pepper.

2. Once well-combined, form into about 30 small meatballs, or 15 larger meatballs.

3. Drizzle baking pan with olive oil and bake at 350 degrees for ~25 minutes, or until cooked through.
