Chicken Fajita Stuffed Peppers

Ingredients


• 6 bell peppers

• 1 lb boneless skinless chicken breasts

• 2 tsp olive oil

• 1 medium onion, chopped

• 2 tsp minced garlic

• 2 tbsp lime juice

• 1 1/2 tsp chili powder

• 1 tsp cumin

• 1/2 tsp paprika

• 1/2 tsp salt

• 1/2 tsp pepper

• 1 cup chopped tomatoes

• 2 cups rice, cooked

• 1 cup black beans

• 2/3 cup shredded cheddar cheese


Instructions


1. Preheat oven to 400°F and line an 8 x 8” baking pan with foil.

2. Wash bell peppers, cut in half lengthwise, and remove ribs and seeds from the inside.

3. Dice chicken into bite size pieces, about 1-1½” each.

4. Heat a large skillet over medium heat, pour oil and sauté onion and garlic until translucent (about 2 minutes).

5. Add chicken, lime juice, chili powder, cumin, paprika, salt and pepper and stir to combine. Cook for ~5

minutes until chicken is cooked through.

6. Add chopped tomato, stir and cook another 1 minute.

7. Turn off heat, add cooked rice and beans, and mix well.

8. Place bell peppers on baking sheet and stuff with filling, dividing equally.

9. Top with shredded cheese.

10. Bake for 15-20 minutes until peppers are cooked and tender.
